Scart cables keep coming up on ebay, you might consider adding them to your catalog.
These pages give pretty good detail on the wiring of bothe composite and full RGB and you might be able to come to an arrangement with the author for production on demand.

I don't have a flat panel, but I made up the composite lead for my toaster and it works really well with my fat telly. A little bit of colour bleed but nothing like coming in through the ariel. Doing a full RGB cable should give a fantastic picture but my telly needs the volts on the line to tell it to switch to RGB (I think).
You could also design/offer circuit boards to entirely replace the modulator in 16/48/+ with a composite/RGB out, then no one should have bother with new TVs.
